OpenBCI GUI works best with the Bluetooth dongle, it is the best supported path, and required for instance for LSL. But it is also possible to connect to the OpenBCI GUI over the WIFI shield, but only up to 16 channels. For other options, we suggest to use to use BrainFlow, InfluxDB & Python.
